Shrimp Broth!

All you need are shrimp skin, some aromatics/alliums of choice and a wee bit of salt and soy sauce to flavor at the end! (Kombu is a bonus ingredient but it is also optional)

Ingredients

1/2 cup shrimp skin

3-4 Garlic cloves, roughly chopped

1 scallion or green onion

1 knob of ginger chopped

1 shallot

salt to taste

1 piece of Dried Kombu (seaweed/kelp) optional*

light soy sauce to taste

1 cup of water

Boil all ingredients (with the exception of salt and soy sauce)

and bring to a simmer. Let that simmer for about 10 minutes.

Turn off stove and add soy sauce and salt to taste ( a little goes a long way). I always add a tsp of soy sauce + a pinch of salt to start and amp it up according to taste.

Voila! You have you very own quick shrimp broth, use it in ramen, soups, steamed egg or sip on it solo just like me. Enjoy!
