Spicy Sesame Noodles: Coffee Prince Edition
Ingredients
For Hand Cut Noodles:
2 cups of flour
1 tsp of salt
1/2-3/4 cup of room temp. water
1 pinch of sugar
For Spicy Sesame Sauce:
3 garlic cloves, minced
1/2 tbsp of grated ginger
1 tbsp Tahini
1/2 tbsp peanut butter
1/2 tbsp soy sauce
1/2 tbsp of sugar
1 tbsp rice vinegar
1 tbs of Dr. Dane’s Kitchen Lemongrass Chili Sauce
Pince of salt to taste
How to Do it!
In a large bowl add your flour and salt, mix together and add your water in slowly. Knead together until the dough forms into a cute ball.
Once a ball is formed, let it REST (I know this can be super difficult but you want you baby dough to rest a bit) for about 15 minutes.
Grab that baby dough and knead and knead until your ball looks super smooth and round. At this point you will need to let you dough rest once more. Pop on your favorite K-drama, in one episodes time that dough will be read to roll out and cut.
Toss some flour on your surface that you’re going to roll your dough out on. Roll the dough out (with a rolling pin), starting from the middle and rolling outward. The noodle thickness depends on your preference. If you like your noodle on the thinner side, try rolling it out so that there is more surface area (like a think crust pizza).
Fold the dough in half and cut your noodles
Bring a pot of water to a boil and toss your noodles in there for 3-5 minutes maximum!
For the sauce!
Mix all the sauce ingredients in a bowl, then toss in cooked hand cut noodles and mix in thoroughly,
Plate your noodles up and garnish with some cucumber and sesame seeds. Enjoy!
