Ube Puddin with MELONA Ice Pops
This is a super easy recipe you can set and forget for a simple elevated dessert. This is your treat yourself dessert for that Part II thing these k-dramas are doing now……
Ingredients:
2 sticks of Melona use flavored ice pops
1 1/2cup of dairy or non-dairy milk of choice
2 tbsp of arrow root powder
1/4 brown rice syrup OR honey (clove honey would be fine)
Pinch of salt
How to do it
Pour 1 cup of milk in a saucepan and bring to a boil. While boiling make a slurry of the remaining 1/2 of milk and arrow root powder, set aside.
When the milk in the saucepan comes to a slight boil, mix in sweetener of choice and a pinch of salt. Turn stove off when it comes to a full boil.
Add in the arrow root slurry SLOWLY while stirring to avoid clumps. Then, and both Melona bars into the mix and stir. The mixture should be slightly thickened at this point.
Pour into glassware and refrigerate for a minimum of 2 hours before serving.
Take out and serve with shaved chocolate, coconut or even whipped cream.
Super simple and delicious.
P.S: You can replace the arrow root with corn starch OR even tapioca starch. The most pudding like texture will be from the corn starch. I would say the more arrow root used the stretchier the texture will become.. kind of like hot mochi!
