Fried Pumpkin Ravioli with Love in Contract
Okay I had to give you fried ravioli for a couple of reasons. It is super easy to make, a crowd pleaser and gets two thumbs up for easy eats when it comes to watching a k-drama while eating.
Love in Contract is Park Min-young’s most recent drama, it is a rom-com k-drama centered around a young woman who uses her talents and charms to own her own business. What is that business you may ask? She is a highly selective marriage contract professional. So basically like a high end temporary bride for her clients in need.
Okay, the concept sounds a little out there BUT if you observe the needs of your market, and her skills are highly sought. She accepts legally binding marriage proposals and then divorces the client cleanly to meet their needs. All things take a turn when she has earned enough money to leave the business and wants to retire.
She has ONE last client to square away, a mystery man who she has dinner with EVERY Monday, Wednesday and Friday for the last 5 years. Little does she know this man might be more than a temporary husband.
The show is currently about half way in, 8 episodes and if you are familiar with k-drama format, a series usually lasts about 16 episodes. My review so far? honestly there are a lot of typical k-drama tropes that I really want to look past because the character developments are pretty amazing to watch.
I also LOVE the Yumi’s Cells season 2 reference that was made in episode 7 in regards to the epic kiss scene between Kim Go-eun and Jinyoung. By the way you will come to find while reading my blog I am totally, utterly in LOVE with Kim Go-eun she is amazing.
I digress, I wanted to make a super easy snack to go along with the shower and the fall season. Fried Pumpkin Ravioli seemed to be the perfect match.
Here is what you will need:
Ingredients
1 pack of pumpkin ravioli (or any flavor ravioli)
1 egg
1/2 cup all purpose flour
1/4 cup of plain panko
2 tbsp of grated parmesan cheese
2 tbsp of fried shallot
1-3 shakes of dried basil
1-3 shakes of cheese seasoning from trader joes ( NOT mandatory)
How to do it!
Pre-heat air fryer to 350F
Prep your dredging station, in one bowl break and whisk egg. In a second bowl, add your flour, in the third and final bowl add the remaining panko, shallot, cheese, basil and cheese seasoning and mix gently.
Open your packet of ravioli and starting with the flour, dip and make sure both sides of ravioli is covered in flour. Then, transfer ravioli to the egg did and make sure both sides are dredged. Last layer is dipping the ravioli in the panko mixture.
Repeat the previous step until you are done dredging the ravioli. Spray a oven safe pan with oil and put breadcrumb crusted ravioli on it and pop it in air fryer.
Cook for a total of 5 minutes and flip half way to make for an even fry. Serve with a dip or eat on its own. I served this up with organic marina from Trader Joe’s, it was my first time trying their marinara and it was not bad.
This was THE bomb, the added shallots and parmesan cheese added another layer without overpowering the ravioli. I totally felt like I was eating with the leads whilst having their dedicated dinner on Wed night as well.
